Foie-gras

Also known as crisp or pastis, tourtière is a mythical cake from southwestern France.

It has its origins in the Saracen invasions of the 8th century. Apples, Armagnac and a savory puff pastry gently stretched, slightly dried, oiled and sweet are the basis.
It was and is still the delicate and essential dish of ceremonies and rural festivals in our region. No wedding or baptism formerly in our country without the agitation of the indefatigable cooks who were busy with the display, the drying and the cooking of the precious dessert, all the week preceding the event.
The secret of the manufacture of the tourtière was yesterday jealously guarded within each family. Today, the secret is lifted!
